Cherry Berry Beet(iful) Protein Smoothie

When your protein shake is bright pink, it is going to be a good day. 

I continue to search for ways to make smoothies delicious, but lower sugar. This recipe I decided to use something I have never used before, but heard it is amazing. I use STEAMED cauliflower along with steamed beets. Beets add some sweetness to the smoothie and cauliflower adds creaminess. The only thing I caution is try not to stain everything pink! 


Ingredients (serves 2) 

-1 cup cauliflower, steamed 

-1 beet (~ 1/2 cup), steamed and sliced 

-1 cup unsweetened vanilla almond milk 

-1 cup of Trader Joe's frozen cherry berry mix (use any frozen berries or cherries you have) 

-1.5 scoops vanilla protein powder 

-few ice cubes 

-optional (if you like things on the sweeter side): 1 Tbsp. maple syrup or raw organic honey 


-Steam the veggies until tender but not over-cooked. Leave out to cool. 

-In a blender, add the veggies, almond milk, frozen fruit, protein powder and ice. 

-Blend until smooth. 

-Add to a cup and sprinkle with some hemp seeds or chia seeds.
