Vanilla Protein Pancakes with Chia Peanut Butter Drizzle

Because sometimes you need something other than a protein shake to meet your protein needs in the AM. 

Though I love to experiment with food and come up with amazing recipes for you all, I have something sad to admit. I can go DAYS eating the same breakfast, over and over and over. My “go-to” breakfast is usually yogurt, chia seeds, almond butter and fruit. It just provides all I need and so easy to prepare. To break myself out of this rut, I decided to experiment with recipes I can make in advance (Sunday meal prep or night before) and bring with me to have at work the next day. Protein pancakes have definitely become a new and exciting addition to the morning fuel. To help add in some healthy fats and fiber that I usually get with my yogurt parfait, I added peanut butter and chia seeds together to make a tasty drizzle. No maple syrup here! Recipe (serves 4) 

Ingredients 

For the Vanilla Protein Pancakes: 

-2 bananas, mashed

-2 eggs, whisked

-1/2 cup protein powder (4 scoops) **I used Slap Nutrition Vanilla Whey Protein Isolate

-1 tsp. vanilla extract 

-Optional for fluffy pancakes: 2 Tbsp. of coconut flour**

For the Chia Peanut Butter Drizzle:

-1/4 cup peanut butter of choice, all natural

-1 Tbsp. grass-fed Kerrygold butter, melted

-1 Tbsp. organic chia seeds 

-1 tsp. vanilla extract

-2 tsp. cinnamon 

-Optional if you want some sweetness: honey or coconut sugar (1 Tbsp.)

**Banana chips crushed for garnish and a little crunch 

Directions

-In a large bowl, mix the bananas, eggs, and protein powder until fully combined. Add vanilla extract and set aside. 

-Over medium heat, spray a non-stick pan with olive oil spray or oil of choice. Place a couple ounces of batter onto the pan and flip once bubbles form and edges become brown. 

-Set aside the pancakes while you make the drizzle. 

-In a bowl, combine the melted butter, peanut butter, chia seeds, vanilla extract and cinnamon. Mix with a spoon until it makes a consistency of a sauce. 

-Drizzle the pancakes and EAT! 

Nutrition Facts (1/4 of recipe): Pancakes: 188 calories, 15 grams carb, 3 grams fat, and 28 grams protein. Drizzle: 135 calories, 5 grams carb, 12 grams fat, and 5 grams protein.
